1Wash and dry all produce. Fill 2 medium pot with water and a pinch of salt each and bring to a boil. Mince or grate garlic . Peel and mince ginger . Trim and discard bottom inch from asparagus , then cut into 2-inch pieces. Trim, then thinly slice scallions , keeping greens and whites separate. 2Once water is boiling, add basmati rice to one of the pots. Cover, lower heat, and reduce to a simmer. Cook until tender, 15-20 minutes. Remove from heat and keep covered until meal is ready.basmati rice: 1.5 c -

4Heat a large drizzle of vegetable oil in a large pan . Halve pork tenderloin lengthwise, then cut into strips. Season with salt and pepper . Put cornstarch in a medium bowl , then add the pork and toss to coat. Discard any excess cornstarch. Add pork to the pan in a single layer and cook until browned, 1-2 minutes per side. 5Remove pork from the pan and set aside. Heat a drizzle of oil in the same pan over medium heat. Add ginger, scallion whites, and garlic and toss until fragrant, about @.
